Here goosey goosey goose...

Greylag geese are everywhere here and are considered a pest in Orkney as they can eat over 1kg of grass a day each.  Ever since we first moved here, Danny was determined that he was going to get some for our dinner -- and finally he did!  Introducing Danny's first goose:


We don't know it's gender, so I will just refer to the goose as it...  :)

Plucking was much more time consuming than with a chicken as once you get the feathers off then there's all the down -- but I will be faster next time now that I know what to expect...

Weighed in at just under 4.5 lbs after cleaning.  I just roasted it plain this first time to have a baseline of knowing what to expect from these geese.


70 minutes in the oven (first 15 minutes at 220c and then the rest at 180c) was a little too long but not much.  Next to no fat on it at all, so the meat was a little dry but quite tasty.  Will need to put bacon on it next time I think...  Wondering if maybe it's because it's so early in the season and they will get fattier as we get more into winter?


Fingers crossed this will be the first of many!

Thanks for that Jane -- so I was right in thinking that they will have more fat later in the season -- can't wait until I can do roast potatoes in goose fat!! :)
